Hi - Interesting topic. I'm only able to answer very generally for Oregon
markets, in my role as program manager doing market outreach and research
last year I noticed that most of the larger urban markets and many of the
smaller more rural ones had recycling systems (bins and signs) set up for
solid waste that would fit into the established recycling programs (paper,
plastic, cans...) I did not see evidence of food wastes being recycled,
however, which is no indication that it was not in play.
If you're interested, I could post your request to the OR state-wide
manager's list-serve which might get you more specific answers from those on
the implementation level. Let me know.

market waste management, As it is my understanding that this list
has doubled or tripled in size since then, I am sending this out
again in hopes of receiving additional feedback from some of the
newer list subscribers. Thanks.

I am researching the topic of waste management at farmers markets,
and I am interested in feedback from any and all of you. I will give
you some starter questions, but I am interested in any ideas and
experiences you would like to share with me about market waste
management. Please email me directly at zach at cowswithguns.com. No
need to clog up this list with responses.
Does your market have prepared food vendors? If so, how do you
handle the waste they generate?
Does your market have a recycling program?
How does your market deal with compostable waste?
Do you require your vendors to haul out their own waste, or do you
provide receptacles?
Does your market prohibit any packaging or serving materials, such as
plastic bags, styrofoam containers, non-compostable plates, etc.?
Does your market have a "zero-waste" program in place?
I appreciate any information you can provide.
